POTATO CASSEROLE 
2 lbs. frozen hash browns
1/2 c. melted butter
1 tsp. salt and pepper
2 tbsp. minced onion flakes
1 can cream of chicken soup
1 c. sour cream
2 c. grated cheese
1/4 c. melted butter
2 c. crushed cornflakes or Ritz crackers (crushed)

Mix all ingredients except 1/4 cup butter and crumbs. Put in 9 x 13 inch pan. Mix 1/4 cup butter and crumbs and top casserole. I use parboiled diced fresh potatoes and diced fresh onion.

Bake at 350 degrees for 45 minutes to 1 hour.
