MEATBALL POTATO CASSEROLE 
1 lb. ground beef
1/2 c. cracker crumbs
4 med. potatoes
1 can cream of chicken soup
1 sm. onion, chopped fine
1 egg
Salt & pepper to taste

TO MAKE MEATBALLS: Mix well ground beef, crumbs, onion and egg. Add desired amounts of salt and pepper. Shape into small meatballs. Fry in oil until brown.

Peel potatoes. Cut into quarter sections. Boil until almost tender. Place potatoes and meatballs into a casserole dish. Pour soup and 1 soup can of water over potatoes and meatballs. Bake at 350 degrees for about 30 minutes. Cream of celery, cream of mushroom or cream of onion soups may be substituted for cream of chicken soup.

I made this with frozen pre-made meatballs and I also added a bag of mixed veggies to the casserole. It is not fancy, but it is quick and easy, and my whole family enjoyed it from Grandma down to 2 year old.
