RICE PUDDING 
1/2 c. rice
1 c. water
1 qt. milk
3 eggs
3/4 c. sugar
1 tsp. vanilla
3/4 c. evaporated milk

Cook rice in water until all water is evaporated. Pour milk into rice and cook and stir constantly for 25 minutes.

In separate bowl, beat together eggs, sugar, evaporated milk and vanilla. Remove rice from heat and stir mixture in. Return to heat and bring to a boil.

Pour into a 2 quart casserole and refrigerate. Garnish with cinnamon.
