ENCHILADA CASSEROLE 
1 lg. can evaporated milk
1 lb. Velveeta cheese
1 can cream of chicken soup
1 can mushroom soup
1 pkg. taco seasoning mix
1/2 to 1 c. grated cheese
1 (8 oz.) jar Pace Picante sauce (mild - garden fresh flavor)
1 sm. onion, diced
1 1/2 lbs. ground beef
1 pkg. corn tortillas

Brown ground beef and onion. Mix in taco seasoning mix. Place milk, Velveeta cheese, soups, sauce in a large saucepan and heat until cheese is melted. (heat over low heat, stirring or heat in microwave.) Lightly grease a 9 x 13 x 2 inch pan and place a layer of tortillas then meat, and finally the sauce. Place a second layer of each. Sprinkle grated cheese on top, cover with foil and bake for 25 minutes at 375 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
