ENCHILADA CASSEROLE | |
1 lg. can evaporated milk 1 lb. Velveeta cheese 1 can cream of chicken soup 1 can mushroom soup 1 pkg. taco seasoning mix 1/2 to 1 c. grated cheese 1 (8 oz.) jar Pace Picante sauce (mild - garden fresh flavor) 1 sm. onion, diced 1 1/2 lbs. ground beef 1 pkg. corn tortillas Brown ground beef and onion. Mix in taco seasoning mix. Place milk, Velveeta cheese, soups, sauce in a large saucepan and heat until cheese is melted. (heat over low heat, stirring or heat in microwave.) Lightly grease a 9 x 13 x 2 inch pan and place a layer of tortillas then meat, and finally the sauce. Place a second layer of each. Sprinkle grated cheese on top, cover with foil and bake for 25 minutes at 375 degrees. |
