COCONUT OATMEAL CRISPIES | |
1 c. butter flavored shortening 1 c. sugar 1 c. packed brown sugar 3 eggs 1 tsp. vanilla extract 2 c. quick cooking oats 1 1/2 c. all-purpose flour 1 c. flaked coconut 1 tsp. baking soda 1 tsp. salt In mixing bowl, cream shortening and sugars. Add eggs and beat in vanilla. Combine oats, flour, coconut, baking soda and salt; gradually add to creamed mixture. Shape into two 6-inch rolls. Wrap each in plastic wrap. Refrigerate for 1 hour. Unwrap dough and cut into 1/2 to 1/4-inch slices. Bake 2-inches apart on ungreased baking sheets. Bake at 350°F for 8 to 10 minutes or until golden brown. Yield: 4 dozen. |
