OATMEAL COCONUT RAISIN BARS 
1 1/2 c. (3 sticks) butter
2 c. firmly packed brown sugar
2 lg. eggs
2 tbsp. water
2 tbsp. vanilla extract
1 1/2 c. flour
3/4 tsp. baking powder
1/4 tsp. ground cinnamon
1/4 tsp. salt
2 1/2 c. rolled oats
1 1/2 c. chopped walnuts
3/4 c. golden raisins
1/2 c. shredded coconut

Butter 10 x 14 rimmed cookie sheet. Line bottom with parchment. Cream butter and brown sugar in large bowl until light. Beat in eggs 1 at a time. Beat in water and vanilla.

Combine flour, baking powder, cinnamon, and salt in small bowl. Add to butter mixture and stir just until combined. Mix in rolled oats, walnuts, raisins, and coconut (dough will be stiff).

Press dough evenly into prepared pan. Bake at 325 degrees until top is golden brown, about 35 minutes. Cool in pan on rack. Use sharp knife around pan sides to loosen bars. Turn out onto rack.

Peel off paper. Invert again onto another rack so top surface faces up. Cool, and cut into bars.
