CHICKEN AND APPLE SALAD 
3 med. red apples
Lemon juice
1 1/2 c. cooked cubed chicken
1/2 c. sliced celery
1/4 c. chopped onion

DRESSING:

1/3 c. salad dressing or mayonnaise
4 tsp. lemon juice
1/2 to 1 tsp. grated lemon peel
1/4 tsp. salt
1/4 tsp. allspice
1/8 tsp. pepper
Lettuce leaves

Cut apples in half from top to bottom; remove and discard seeds. Hollow out centers, leaving sides about 1/8 inch thick. Brush cut edges of apple halves with small amount of lemon juice. Cover; refrigerate.

Chop removed apple pieces. In medium bowl, combine chopped apple, chicken, celery and onion. In small bowl, blend dressing ingredients. Spoon dressing over chicken mixture; toss gently. Cover; refrigerate 1 to 2 hours to blend flavors. To serve, place apple halves on lettuce-lined plates; top with chicken mixture. Garnish as desired. 6 servings.
