CHICKEN AND APPLE SALAD 
SALAD:

1 lb. chicken breasts
3 med. Red Delicious apples
Chopped pecans
3/4 c. apple juice
1/4 tsp. cinnamon
Dash nutmeg

DRESSING:

1/2 c. mayonnaise
4 tsp. lemon juice
Scant tsp. lemon peel
1/4 tsp. salt
1/4 tsp. allspice
1/8 tsp. pepper

Poach chicken in apple juice, cinnamon and nutmeg 15-20 minutes. Cool and cut into cubes. In a small bowl combine all dressing ingredients; set aside. Core and cube apples. In large bowl combine chicken, apples and chopped pecans. Add dressing mixture and toss until well coated. Refrigerate. Serve cold.
