CHILES RELLENOS 
2 (7 oz.) cans whole green chiles, rinsed and seeded
4 beaten eggs
1/4 tsp. dry mustard
1 1/2 lb. Monterey Jack cheese
1/2 c. milk
1 tsp. salt
1/4 tsp. pepper

Layer chiles and cheese twice in greased baking dish. (I use home grown Hungarian bananas, fresh or frozen). Combine eggs, milk and seasonings; pour over chili mix. Bake at 350 degrees for 30-35 minutes until lightly browned. Cool 5 minutes. Cut and serve.
