MOSAIC SALAD | |
9 oz. nondairy whipped topping, thawed 1 c. canned or frozen (thawed) cranberry orange relish 13 1/4 oz. pineapple tidbits, drained 11 oz. mandarin oranges, drained 1 c. seedless grapes 1 lg. banana, sliced 1/2 c. pecan pieces Lettuce Line a 1 1/2 quart loaf pan with foil. Combine whipped topping, cranberry orange relish, pineapple tidbits, mandarin oranges, grapes, banana and pecan pieces. Spoon into lined pan and fold foil over top. Freeze until mixture is solid. Remove frozen block from pan, unfold foil and when slightly thawed, sliced in 3/4 inch slices. Place salad slices atop lettuce 10 to 15 minutes before serving time. NOTE: For last minute speedy serving, cut number of serving slices, spread them on a cookie sheet lined with foil plus extra to cover top and seal around the edges. Hold in freezer until 15 to 20 minutes before preparing salad plates with lettuce. |
