HERBED OVEN FRIED FISH FILLETS 
1 1/2 lbs. fresh fish fillets, such as salmon, trout, bass or white fish
1/2 c. milk
1/2 c. all-purpose flour
1 tsp. each dried basil & chervil leaves
1/4 tsp. salt
1 egg, beaten
1/2 c. fine dry bread crumbs
1 tbsp. melted butter
Parsley & lemon wedge for garnish

1. Wash fish and pat dry. Cut into serving pieces, dip fish first in milk, then in mixture of flour, salt, basil and chervil.

2. Add the egg to remaining milk. Add the crumbs, to remaining flour mixture.

3. Dip fish pieces into milk/egg mixture, then into flour/crumb mixture. Place into buttered baking dish. Drizzle with melted butter.

4. Bake at 450 degrees for 10 minutes or until fish flakes when probed with a fork. Garnish with parsley and lemon. Serve immediately. Preparation time: 10 minutes. Baking time: 10 minutes. Serves 4.

My family loves this recipe. The flour, bread crumbs, and herbs are perfectly balanced...I did alter from using the chervil to using a few sprinkles of pepper. I have a hard time finding foods my son will eat for his lunch or I find he often comes home and hasn't eaten his sandwich but everytime I make this recipe he asks for leftovers before we can take our first bite.
