CRANBERRY BREAD | |
2 c. sifted flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. salt 1/4 c. shortening 3/4 c. orange juice 1 tbsp. grated orange rind 1 well beaten egg 1/2 c. chopped nuts 2 c. chopped cranberries Sift together flour, sugar, baking powder, baking soda and salt; cut in shortening until mixture resembles coarse cornmeal. Combine orange juice, orange rind and egg; pour all at once into dry ingredients, mixing just enough to dampen. Carefully fold in nuts and cranberries. Spoon into greased loaf pan (9 x 5 x 3 inches). Spread corners and sides slightly higher than center. Bake at 350°F about 1 hour. Remove from pan after cooling. |
