SUGAR COOKIES - GRANDMOTHER'S
VARIETY
 
1 1/4 c. sifted all-purpose flour
1 tsp. low sodium baking powder
1/4 tsp. nutmeg (optional)
1/3 c. vegetable oil
1/2 c. sugar
2 egg whites
1 tsp. lemon juice
1/2 tsp. lemon peel

Mix and sift first three ingredients. Combine oil and sugar in mixing bowl. Add unbeaten egg whites, one at a time, beating well after each addition. Add lemon juice and peel. Add sifted dry ingredients all at once; blend well. Shape dough into little balls, about 3/4 inch in diameter. Dip balls into granulated sugar. Place balls, sugar side up, 3 inches apart on lightly oiled baking sheet. Press with a flat-bottom glass covered with a damp cloth until dough is 1/8 inch thick. Criss-cross with tines of fork. Bake in 375 degree (moderate) oven 8 to 10 minutes. Remove from baking sheet at once. Cool on cake rack.
