SHRIMP SCAMPI 
About 1/2 lb. cleaned & deveined shrimp per person
Zataran's seafood seasoning (red)
Garlic salt
Cayenne pepper
Parsley flakes
Basil flakes
1/8 c. butter per pound of shrimp
Cooking oil
Dry white wine
Lemon juice (fresh or bottled)
Chopped green onions (just the tops)
About 3 onion tops per pound of shrimp

(Measurements are per pound. Figure in advance.)

Place butter and oil in large saucepan over high heat. When butter melts, mix well with oil and throw shrimp in pan. Add 2 tablespoons wine, 1 teaspoon lemon juice, 1/4 teaspoon garlic salt, 1/4 teaspoon cayenne pepper and basil. Pinch of parsley. Stir constantly then add onion tops. Cook for about 4 minutes. Serve immediately. Delicious
