SHRIMP SCAMPI | |
Preparation time: 25 minutes; total time, 25 minutes. Ingredients for 4 servings: 1 (1 lb.) pkg. frozen deveined shrimp, thawed and drained 1 1/2 tbsp. butter 2 tbsp. dry white wine 1 tbsp. fresh lemon juice 2 clove garlic, minced 1/4 tsp. salt 1/4 tsp. basil, crushed Dash pepper Generous dash ground red pepper 2 tbsp. chopped parsley Lemon slices for garnish (Or 1 pound fresh shrimp, peeled and deveined). Preparation: Pat shrimp dry with paper towels; set aside. Melt butter in 10 inch nonstick skillet over medium heat. Add wine and next 6 ingredients; stir to blend. Increase heat to medium-high. Add shrimp and cook 5-6 minutes or until they turn pink and are tender; stir often. To serve, sprinkle with parsley and garnish with lemon. Note: To juice a lemon, leave it at room temperature. Roll back and forth on a countertop with the palm of the hand; cut it in half and squeeze. One medium lemon yields 2-3 tablespoons juice. Calories per serving: about 150. Rice is the perfect accompaniment for shrimp. Try this recipe for Rice Pilaf. RICE PILAF Ingredients for 4 servings: 2 tsp. butter 1 c. sliced mushrooms 3 tbsp. chopped scallion 1 1/3 c. chicken broth 1/2 c. uncooked long-grain rice 1/8 tsp. salt Dash pepper Dash ground red pepper Preparation: Melt butter in saucepan. Add mushrooms, scallion. Cook over medium heat, stirring frequently, about 7 minutes or until soft. Remove and set aside. In same saucepan, bring broth to a boil. Add rice and seasonings. Cover and simmer 20 minutes or until rice is tender. Add mushroom mixture and heat through. Yield: about 2 cups. Calories per serving: about 125. |
