JALAPENO RICE 
3 c. cooked rice
1/4 c. butter
2-3 chopped green onions
4 oz. can chopped green chilies
2 c. sour cream
2 c. Monterey Jack cheese, grated
2-3 tsp. chopped jalapenos

Saute onions and green chilies in butter. Pour rice and butter mixture into a large bowl. Stir in sour cream, 1 cup of cheese, and jalapenos into rice mixture. Pour rice into a lightly greased baking dish. Top with remaining cheese. Bake at 350 degrees for 30 minutes. Yield: 8 servings.
