JALAPENO RICE 
1/4 c. butter
1 c. chopped onions
1 (14 oz.) box cooked rice
1/2 tsp. salt
1/2 tsp. pepper
2 c. sour cream
1 c. cottage cheese
3 (4 oz.) cans chopped green chillies, drained or 1 can jalapeno peppers, seeded and drained
2 c. grated sharp Cheddar and-or Monterey Jack

Melt butter and saute onions. Remove from heat and stir in hot rice, sour cream, cottage cheese, chillies, salt and pepper. Layer 1/2 rice mixture in bottom of greased 12 x 8 x 2 dish. Sprinkle with 1/2 cheese. Repeat. Bake, uncovered, 25 minutes at 375 degrees.
