JALAPENO CORN RICE 
3 c. cooked rice
1/4 c. butter
1 med. onion, chopped
1 med. green pepper, chopped
1 c. celery, chopped
1 tbsp. sugar
1 tsp. salt
1 (16 oz.) can cream style corn
1 c. sharp cheddar, grated (4 oz.)
4 fresh jalapenos, without seeds, chopped

Saute onion, green pepper and celery until tender. Then combine with all the other ingredients. Pour in 12"x8" dish. Bake at 350 degrees for 40 minutes.
