ZUCCHINI PIE 
4 c. raw zucchini, sliced thin
1/2 tsp. salt
1/4 c. flour
2 eggs, beaten
1 1/2 c. sugar
1 1/2 tsp. apple pie spice or cinnamon & nutmeg
1/4 c. lemon juice

Combine all ingredients in a large bowl; stir well. Pour into unbaked pie crust and top with crust if desired. Bake at 375 degrees for 1 hour.
