TWICE BAKED POTATOES 
4 med. (7 oz. each) baking potatoes
1/2 c. dairy sour cream
1 (3 oz.) pkg. cream cheese, softened
2 tbsp. butter
1 tsp. onion salt
1 tsp. frozen chives or dried
1/8 tsp. pepper

Pierce skins of potatoes with tines of fork. Arrange potatoes on microwave glass tray. Cook in microwave oven on full power for 9-11 minutes or until done.

Cut slice from top of each potato and carefully scoop out insides into a mixing bowl. Add remaining ingredients. Beat until smooth. Spoon mixture back into potato skins. Garnish potatoes with paprika and parsley flakes as desired. Heat in microwave on full power for 2 1/2 to 3 minutes or until heated through.

Since microwave ovens vary in power, you may need to adjust your cooking time.
