TWICE-BAKED POTATOES 
4 med. potatoes
1 (5 oz.) jar pimento cheese spread
2 tbsp. butter
1/2 tsp. salt
Dash of pepper
Chopped chives

Prick potatoes in several places with fork. Microwave uncovered on high 7 minutes; turn over and re-arrange potatoes. Microwave until just tender, about 4 minutes. Let stand until cool enough to handle.

Cut potatoes lengthwise into halves; scoop out inside, leaving a 1/4 inch shell. Mash potatoes until no lumps remain; beat in cheese, milk, butter, salt and pepper until fluffy. Spoon mixture into potato shells. Sprinkle with chives. Microwave uncovered until hot 4 to 5 minutes. 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
