CALORIE - CROPPED CARROT -
POTATO BAKE
 
4 med. potatoes
4 tsp. Molly McButter all natural butter flavor sprinkles
1/4 c. shredded carrot
1/4 c. sliced water chestnuts
1/4 c. neufchatel or light cream cheese, softened
Chopped chives

Microwave potatoes. Split potatoes and scoop out pulp, leaving shell. Combine pulp and all ingredients except chives. Spoon mixture into potato shells. Microwave on high 4-6 minutes or until heated through. Sprinkle with chives. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
