CREAM OF CARROT SOUP 
4 carrots, sliced (1 c.)
1 med. onion, sliced
1 stalk celery (with leaves), sliced
1/2 c. chicken broth
1 tsp. salt
Pinch cayenne
1/2 c. cooked rice, pasta or potato
1 c. chicken broth
3/4 c. cream or milk

Simmer above ingredients for 15 minutes. Put in blender and add 1 teaspoon salt, cayenne and rice, pasta or potato. Blend on high. Remove cover and add 1 cup chicken broth and cream or milk. Heat over simmering water, or serve chilled. I use potato. I cook it with the other vegetables.
