SLICED BAKED POTATOES 
4 med. even potatoes
1 tsp. salt
2-3 tbsp. melted butter
2-3 tbsp. chopped fresh herbs such as parsley, thyme or sage or chives or 2-3 dried herbs of choice
4 tbsp. grated Cheddar cheese
1 1/2 Parmesan cheese

1. Rinse and pat dry; peel if tough skins.

2. Cut potatoes into thin slices but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way.

3. Place potatoes in a microwave safe dish or pan. Sprinkle with melted butter and chopped parsley, chives or sage.

4. Microwave at high for 10 minutes rearranging the potatoes after 5 minutes.

5. Let rest for 5 minutes.

6. Sprinkle with grated cheese and Parmesan cheese.

7. Microwave for 4-6 minutes on high power until cheeses are melted and potatoes are soft. Sprinkle with salt. Serve as a side dish or with salad as a main dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
