SAUSAGE POTATO BAKE 
1 1/2 lbs. potatoes, sliced 1/3 inch thick
1/4 c. water
2 tbsp. sausage drippings
2 tbsp. snipped fresh parsley
Salt and pepper to taste
1/2 lb. carrots, sliced 1/8 inch thick
1 lb. bulk sausage, cut into 8 patties
2 tbsp. flour
1/4 tsp. thyme
1 c. milk
Paprika

Place potatoes, carrots, and water into a 1 quart round casserole. Cover with plastic wrap and microwave on high 8 minutes, stirring midway through cooking. Preheat browning utensil 4 to 5 minutes. Press sausage patties onto browning utensil with metal spatula. Microwave on high 3 minutes. Turn patties over and rotate browning utensil. Microwave on high 3 minutes. Cover and set aside. Place 2 tablespoons drippings from sausage into a 2 cup glass measure. Stir in flour, parsley, thyme, salt, and pepper. Using a wire whisk, blend in milk. Whisking midway through cooking, microwave on high 3 to 4 minutes or until thickened. Pour sauce over potato mixture; stir to combine. Place sausage patties on top; dust with paprika. Cover and microwave on high 3 minutes or until heated through. Makes 4 to 5 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
