SPICY CHICKEN CASHEW STIR FRY 
4 chicken breasts, cut for stir fry
5 scallions, chopped
1 red, yellow and green pepper, sliced
1 c. cashew pieces
1 jar picante sauce, hot or mild
2 tbsp. soy sauce
1-2 tbsp. cornstarch, if desired

Stir fry chicken breasts 2-3 minutes. Stir fry peppers and scallions 1 minute. Add soy sauce to picante sauce. Thicken with cornstarch if desired. Add all ingredients except cashews. Simmer 5 minutes. Add cashews. Serve over rice.
