OATMEAL LEMON CHEESE COOKIES 
1 c. butter flavored Crisco shortening
1 (3 oz.) pkg. cream cheese
1 1/4 c. sugar
1 egg, separated
1 tsp. lemon extract or juice of lemon
2 tsp. grated lemon peel
1 1/4 c. flour
1 1/4 c. oatmeal
1/2 tsp. salt
1/2 c. sliced almonds for topping

Combine shortening, sugar and cream cheese; beat well. Beat in egg yolk, lemon juice and lemon peel.

In another bowl combine flour, oatmeal and salt. Stir into creamed mixture. Drop by teaspoon; pat down lightly, brush with beaten egg white and gently press almonds on top. Bake at 350 degrees for 10-12 minutes or until lightly browned. Cool 2 minutes before removing from pan.
