LEMON CREAM CHEESE COOKIES 
1/2 c. butter
1 (3 oz.) pkg. cream cheese
1/2 c. sugar
1 tsp. grated lemon rind
1/4 tsp. lemon extract
1 c. sifted flour
1/4 tsp. salt
Coarsely crumbled corn flakes
2 tsp. baking powder

Cream butter, cream cheese, and sugar. Add lemon rind and lemon extract. Add flour, baking powder, and salt. Beat until well mixed. Chill dough for a few hours. Shape into balls about 1 inch in diameter. Roll balls in corn flake crumbs. Bake on ungreased cookie sheet 12-15 minutes at 350 degrees.

These are just perfect without the Corn Flakes. They make the cookie too chewy and not in a good way chewy and have a bitter after taste. These are tasty with a lemon frosting on them too. Can't go wrong with lemon. I'd add the lemon juice from the lemon too. It tasted so much better than the actual recipe calls for.
