SUMMER SAUSAGE 
4 lb. ground beef
1/4 c. Morton's quick cure
2 tbsp. hickory smoke salt
2 tbsp. garlic powder
2 tbsp. black peppercorns

Mix together all the above and refrigerate for 24 hours. Shape into 4 rolls and wrap in foil. Puncture bottom of wrap with fork 1 inch apart, place on roaster tray with water under the rolls and bake 1 1/2 hours at 300 degrees. Can freeze!
