CHILLED CREAMY CUCUMBER SOUP 
Enjoy this surprisingly easy and refreshing chilled soup. Perfect on a hot summer day!

4 unpeeled cucumbers
3 to 5 dollops dairy sour cream
salt and pepper, to taste
chopped chives, to taste
splash of hot sauce (your choice)
oregano, to taste
1 (10 oz.) can cream of mushroom or cream of potato soup
1 (15 oz.) can chicken stock (Swanson)

First blend cucumbers with dairy sour cream in a blender until smooth. Pour into bowl and mix in cream of mushroom soup, chicken stock, oregano, pepper and salt, chives and hot sauce. Taste and add more spices if bland. Cover with Saran or plastic wrap and chill the bowl in the refrigerator overnight.
