BROCCOLI AND RICE CASSEROLE 
1/2 stick (1/4 c.) butter
1/4 c. chopped onion
1 (10 1/2 oz.) can cream of mushroom soup
8 oz. processed cheese (like Velveeta), cubed
1 (10 oz.) pkg. frozen broccoli, prepared according to pkg. directions
2 c. cooked rice

Cook first set of ingredients in small skillet over medium high heat until onions begin to brown. stir in second set of ingredients. Continue cooking over medium high heat, stirring constantly, until cheese melts. Stir in last set of ingredients. Place in baking dish and bake in 350 degree oven for 30 minutes.
