BEAN SOUP 
1/4 lb. butter
3-4 diced potatoes
2 cans red kidney beans
3 tbsp. olive oil
1 sm. can tomato paste
1 sm. diced onion
Sm. size pasta or rice

Melt butter with oil in large pan. Fry onion. Add potatoes and paste. Stir and add enough water to cover potatoes. Cook until tender. Salt and pepper to taste. Add beans and enough water to almost fill pan. Add pasta.

I have omitted butter and cut oil to create a low-fat recipe. Still tastes great!
