CHICKEN ALLA PARMINGIANO | |
2 (8 oz.) cans tomato sauce 2 tbsp. olive oil 1 clove garlic, chopped or 1/8 tsp. garlic powder 1/2 tsp. sugar 1 oz. sweet wine 1/8 tsp. oregano Combine all the above ingredients together in medium pot and cook 20-25 minutes over medium heat. Stir frequently. Chicken: 1/2 tsp. garlic powder 1 tbsp. salt 1/2 tsp. black pepper Corn oil 8 boneless chicken cutlets 12 oz. Mozzarella cheese, sliced thin (1/8 inch) Flour Combine garlic powder, salt, and pepper in a small bowl, set aside. Cover bottom of a 10 inch frying pan with corn oil. Flour cutlets, shake off excess and brown in pan over medium to high heat for approximately 3 minutes each side, sprinkling with the garlic mixture. Remove the chicken cutlets to an open pan. Place Mozzarella cheese on each cutlet and cover with sauce. Bake at 350 degrees until cheese starts to melt. Remove and serve. Makes 6 servings. |
