LAYERED ENCHILADA PIE | |
1 lb. ground beef 1 c. chopped onions 1 pinch garlic 2 tbsp. butter 1 tsp. salt 1/4 tsp. pepper 1 tbsp. chili powder 1 can olives (4 1/2 oz.) 1 can (8 oz.) tomato sauce 6 tortillas, lightly buttered 2 c. shredded cheddar cheese 2/3 c. water Saute beef, onion and garlic in butter. Add seasonings, olives and tomato sauce. In a round 2 quart casserole, alternate layers of tortillas, meat sauce and 1 1/2 cups cheese. Sprinkle remaining cheese on top tortilla. Pour water at edge, into bottom of casserole. Cover. Bake in a 400 degree oven for 30 minutes. |
