APRICOT NUT BREAD 
1 c. dried apricots
1 c. sugar
2 tbsp. shortening or butter
1 egg
1/4 c. water
1/2 c. orange juice
2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1/2 c. chopped nuts

Soak apricots 30 minutes; drain and cut into small pieces. Mix sugar, shortening, and egg; add water and orange juice. Sift together dry ingredients and add to above. Blend in the nuts and the apricots. Pour in loaf pan and let stand for 20 minutes. Bake at 350 degrees for 55 to 65 minutes. This recipe can be doubled for 2 loaves.
