APRICOT NUT TEA BREAD | |
1 c. dried apricots 2 tbsp. soft butter 1/4 c. water 2 c. sifted flour 1/4 tsp. baking soda 1 tsp. salt 1 c. sugar 1 egg 1/2 c. orange juice 2 tsp. baking powder 1/2 c. walnuts, chopped (I use black walnuts) Soak 1 cup dried apricots (chopped) for 30 minutes in warm water, covered. Mix 1 cup sugar, 1 egg and 2 tablespoons butter. Stir in 1/4 cup water and 1/2 cup orange juice. Sift together and stir in 2 cups flour, 2 teaspoons baking powder, 1/4 teaspoon baking soda and 1 teaspoon salt. Blend in 1/2 cup nuts and apricots. Put in bread tin. Let stand 20 minutes (very important). Bake at 350 degrees for 50-60 minutes. |
