TANNER'S QUICHE 
90 slices day old bread
5 lb. bacon bits
4 lb. chorizo
5 lb. grated cheddar cheese
5 dozen eggs
1 gallon + 14 cups milk
7 tsp. salt
1 tsp. pepper
1 1/2 lb. (6 sticks) butter, soften to spread

Trim and butter the bread. Line pans with bread butter side down. Crisp fry bacon and them crumble. Cook chorizo and drain off fat and oil. Drain on paper towel. Layer cheese and bacon/chorizo over bread. Beat eggs, milk, salt and pepper. Pour over mixture into each pan. Let stand overnight.

Bake the next morning at 350°F for one hour. It may take longer to cook if not a room temperature when placed in the oven.

Serves 80.
