SWISS VEGETABLE MEDLEY CASSEROLE 
1 (16 oz.) bag frozen vegetable mix (broccoli, carrots, cauliflower), thawed and drained
1 (10 1/2 oz.) can condensed cream of mushroom soup
1 cup (4 oz.) shredded Swiss cheese
1/3 cup dairy sour cream
1/4 tsp. black pepper
1 (4 oz.) jar diced pimento, drained
1 (2.8 oz.) can French fried onions

Preheat oven to 350°F.

In a large bowl, combine vegetables, condensed soup, 1/2 cup cheese, sour cream, pepper, pimento and 1/2 can French fried onions. Pour into shallow 1-quart casserole.

Bake, covered, at 350°F for 30 minutes or until vegetables are done. Sprinkle remaining cheese and onions in diagonal rows across the top; bake, uncovered, 5 minutes or until onions are golden brown.

Makes 6 servings.
