SWISS MEDLEY VEGETABLE CASSEROLE 
1 (16 oz.) bag frozen broccoli, carrots, and cauliflower combination, thawed and drained
1 (10 3/4 oz.) can condensed cream of mushroom soup
1 (4 oz.) c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. pepper
1 jar chopped pimentos, drained; optional
1 (4 oz.) can mushrooms; optional
1 (2.8 oz.) can French fried onions

Combine vegetables soup, 1/2 cup cheese, sour cream, pimentos, mushrooms, and 1/2 can onions. Pour into a 1 quart casserole.

Bake covered at 350 degrees for 30 minutes. Then top with remaining cheese and onions. Bake uncovered 5-8 minutes longer.
