SWISS VEGETABLE CASSEROLE 
1 pkg. mixed vegetables (broccoli, cauliflower and carrots)
1 can cream of mushroom soup
1/3 c. sour cream
1 medium jar pimentos, chopped
1 c. grated Swiss cheese
3/4 tsp. pepper
1 can French fried onions

Let vegetables thaw and drain well before mixing with the other ingredients. Mix onions and grated cheese. Set aside 1/2 of the onion and cheese mixture. Mix all ingredients and bake in 350°F oven for 30 minutes. Remove from oven and spoon the remaining onion and cheese mixture over the top of casserole. Return to oven until cheese melts.
