SOUTHERN RAISED BISCUITS 
1 c. buttermilk
4 c. flour
2 tsp. baking powder
2 tbsp. sugar
1/3 c. shortening
1 tsp. salt
1 pkg. dry yeast
1/2 c. warm water
2 tbsp. melted butter

Heat buttermilk until bubbles around edge; cool to lukewarm. Sift flour with baking powder and salt. Sprinkle yeast over warm water in small bowl. Add sugar and dissolve completely, then stir in buttermilk.

Cut shortening into flour and make a well in the center. Pour buttermilk mixture in the well all at once. Stir together. Turn onto floured board and knead 5 minutes. Gently roll from center to 1/2 inch thickness. Cut with 2-inch cutter into biscuits.

Place on greased cookie sheet, 1 inch apart. Prick each biscuit with a fork. Cover loosely and let raise in warm place until double in size and about 1 inch high. Brush top with melted butter. Bake 10 minutes or until brown at 400 degrees. Makes 30.
