BAKED CHICKEN CASSEROLE 
3-3 1/2 lb. chicken
1 can cream of chicken soup
1 tbsp. lemon juice
3/4 c. salad dressing
1 sm. jar red pimento, optional
2 c. potato chips
1 c. chicken broth
1 c. diced celery
1/2 c. chopped pecans
3 hard boiled eggs, chopped
Dash salt & pepper

Boil chicken until tender. Remove meat from bones and cut moderately fine. Mix all ingredients; pour into deep casserole. Cover with potato chips and bake at 450 degrees for 20 minutes. Serves 8-10. If made early in the day, add potato chips just before baking.
