IRISH SODA BREAD 
2 c. sifted flour
2 tsp. baking soda
1 tsp. salt
2 tsp. sugar
2 tbsp. butter
1/2 c. currants or raisinstbsp. grated orange rind
1/3 tbsp. caraway seed (optional)
1/4 c. vinegar
3/4 c. milk

Preheat oven to 375 degrees.

Sift together flour, baking soda, sugar and salt. Cut in butter with pastry blender until mixture resembles coarse cornmeal. Add currants, orange rind, caraway seed. Set aside.

Combine vinegar and milk. Add half to dry ingredients. Blend quickly. Add remaining liquid and stir until blended.

Turn dough onto floured surface, using 2 tablespoons flour. Knead dough 10 times and shape into round loaf. Place in an 8 inch round pan sprayed with vegetable spray (Pam).

Bake 30-35 minutes. Remove from oven. Cool on wire rack.
