IRISH SODA BREAD | |
3 c. all purpose flour 1/2 c. sugar 3 tsp. baking soda 1 tsp. cinnamon 1 c. seedless raisins 1 tsp. salt 1/4 c. chopped nuts 1 egg 1 1/2 c. milk 3 tbsp. corn oil 1 tbsp. pure vanilla extract 1. Stir together flour, sugar, baking soda, cinnamon, salt, raisins and nuts; set aside. 2. Beat together egg, 1 1/2 cups milk, oil and vanilla. 3. Add liquid ingredients to dry ingredients, blending with a fork. 4. Turn batter into a greased 9'x5" loaf pan; brush top with 1 1/2 tablespoons milk. 5. Bake in preheated 375 degree oven 45 minutes or until bread is brown and tests done. (Do not open oven during first 35 minutes of baking or bread will fall.) Makes 1 loaf. |
