IRISH SODA BREAD 
4 c. flour
1 egg
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 - 3/4 c. sugar
1/2 c. raisins
1 c. milk mixed with 1 tsp. white vinegar
1/2 tsp. salt
Caraway seeds (optional)

Preheat oven to 350 degrees. Grease and flour a black iron fry pan (you could use a round tin pan, but bread will bake more evenly in the iron pan).

Mix ingredients together, wetting with the milk and vinegar mixture, in a wooden bowl with a wooden spoon. (A glass bowl can also be used.)

After the mixture is mixed, add just a bit of flour and knead with the palm of your hand. Form into a ball. Place in prepared baking pan.

With the side of your hand indent the top of the bread to form a cross and you know what to say as you do it.

Bake in preheated oven at 350 degrees for 1 hour. If after 1/2 hour to 45 minutes the bread is too dark then cover with aluminum foil. The bread should be finished in 1 hour. Test with knife. If knife comes out clean bread is done.

Allow the egg and milk with the vinegar to sit at room temperature.
