IRISH SODA BREAD | |
4 c. flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt Sift the above ingredients together several times. Lay aside. 1 tbsp. caraway seed 1/2 c. sugar 1/2 c. Mazola oil 1 egg 1 1/2 c. buttermilk Put the above ingredients in a large bowl and beat until well blended. Add the sifted flour mixture to the liquid mix gradually until thick enough to knead. Dump onto floured board and knead until smooth, adding remaining flour as necessary. Do not over flour, heaving dough still a bit "tacky" or bread will tend to be tough. Put rounded dough into a greased, hot, black, iron, 10 inch skillet. make a cross across the bread with a knife. Bake at 350 degrees for 1 hour, or a little more, depending on oven. NOTE: If you'd like a glaze on the bread, before doing the second set of ingredients, beat up another egg, saving 1/2 for the glaze and put the other 1/2 in the second set of ingredients. You may find it better to cover the bread with a greased piece of foil for the first part of the baking period about 20 minutes, as it sometimes bakes unevenly depending on oven. |
