RED BEET CAKE 
3 eggs
1 1/2 c. sugar
1 c. oil
1 1/2 c. cooked beets (put in blender or food chopper)
2 oz. unsweetened chocolate, melted
1 3/4 c. flour
1 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla

Beat eggs and sugar until light. Add oil, beets and chocolate; mix well. Add sifted dry ingredients. Pour into greased and floured 9" tube pan. Bake for 50 to 60 minutes or until it tests done. Freezes well and stays moist for a long time.
