PUREED BEET CAKE 
1 1/4 c. oil
3 eggs
1 1/2 c. pureed beets (baby food)
2 c. sugar
2 c. flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. cocoa

FROSTING:

6 tbsp. butter
1 1/2 c. sugar
6 tbsp. milk
1/2 c. chocolate chips

Variation: 1 (16 ounce) can diced beets.

Blend oil and beets well. Add sugar slowly to the beet mixture. Add eggs; blend well. Measure dry ingredients and add to the beet mixture and mix well. Pour into a greased 9 x 13 inch pan. Bake at 350 degrees for 40 to 45 minutes.

Frosting: Boil butter, sugar, and milk for 1 minute. Add chocolate chips. Stir well and frost. It sets quickly.
