BEET CAKE 
1 c. chopped nuts
2 c. flour
4 eggs
1/2 tsp. salt
1 c. mashed beets
2 c. sugar
1 1/2 c. oil or 3 sticks butter
1/2 tsp. baking soda
1 tsp. vanilla

Cream eggs, sugar, salt and oil. Mix well dry ingredients and add; beat well. Remove from mixer and add mashed beets and nuts. Stir until well blended. Bake in 9"x13" pan in 350 degree oven.

ICING:

3/4 c. sugar
1 stick butter
1/2 c. evaporated milk
1 can flaked coconut

Boil butter, sugar and milk for 2 minutes. Add coconut; put on cake while warm.

This is a really great spice cake. I cant taste the beets at all. The coconut icing is a must. Without it the cake was dry. Baking time was ????? I did 45 - 60 min. actually forgot to set timer since no time was suggested. Will make again, even the super picky eaters liked it.

This came out REALLY yummy!! I substituted unsweetened applesauce for the oil to cut down on some fat. I made small loaves and still needed to cook them just over an hour (kind of like banana bread). So the author of this recipe should add in a cooking time for sure. I did not make the frosting and used my loaves as more of a "tea cake" with my morning coffee. Delish and healthy!
