CORN PUDDING 
1 lg. egg
1 lg. egg white
1 c. skim milk
2 tbsp. flour
1/4 tsp. baking powder
1/8 tsp. black pepper
1 1/2 c. fresh or frozen corn
2 green onions, including tops, chopped fine
2 tsp. grated Parmesan cheese
Cooking spray

Preheat oven to 350 degrees. In a medium size bowl, whisk together egg, egg whites, milk, flour, baking powder and pepper. Stir in the corn, green onions.

Coat a 9-inch pie pan with cooking spray, add corn mixture and set the pie pan in a shallow baking pan. Add enough hot water to the baking pan to come half way up the sides of the pie pan. Bake uncovered for 1 to 1 1/4 hours or until a knife inserted in the center comes out clean and the pudding is puffed and golden. Serves 4.
